Investigadores de la Universidad Autónoma de Guadalajara descubren parámetros para garantizar la autenticidad del tequila

El Tequila es nuestra bebida nacional por excelencia, en reuniones con amigos y familia siempre nos acompaña, y es que no es extraño decir, “El Tequila me recuerda a casa, a sus aromas, a su clima, a mi tierra” y es verdad, el Tequila en su esencia lleva a nuestra tierra.
Estudios recientes desarrollados por la Universidad Autónoma de Guadalajara (UAG) y su Grupo de Investigación en Materiales y Fenómenos de Superficie, dirigidos por el Dr. Luis Alberto Romero Cano y la Dra. Ana I. Zárate-Guzmán, han demostrado que los suelos de la región de Denominación de Origen del Tequila presentan trazas de metales que migran a la planta de Agave tequilana Weber variedad azul y permanecen durante todo el proceso de elaboración del Tequila, por lo que es posible apreciarlos en el producto final.
Este estudio muestra que suelos de la región otorgan al Tequila características únicas, las cuales pueden ser útiles como trazadores geoquímicos de autenticidad de la bebida, siendo una estrategia innovadora auxiliar a los procesos de verificación actuales para identificar bebidas apócrifas y/o adulteradas logrando una mejora de la imagen del Tequila a nivel mundial.
El trabajo de investigación ha sido desarrollado por la Mtra. Carolina Espinoza-Ángulo, como parte de su trabajo de Tesis para obtener el grado de Maestría en Procesos del Tequila. La UAG en colaboración con el Consejo Regulador del Tequila realizó un muestreo de suelo y agave representativo de la región de denominación de origen del tequila.
Posteriormente en una estancia de investigación realizada en la Universidad de Granada (España) con el Prof. Dr. Francisco Carrasco Marín, la maestra realizó la caracterización de las muestras por espectroscopia de fluorescencia de rayos X. Los resultados arrojaron la presencia de gran variedad de minerales, siendo el Cromo, Bario y Circonio elementos clave ya que estos se relacionan con los suelos volcánicos característicos de la región.
El estudio se complementó en la UAG con apoyo de alumnos de los últimos cuatrimestres de Químico Farmacéutico Biólogo, Walter M. Warren-Vega, y alumnas asociadas al programa de investigación temprana de la Ingeniería en Conservación y Restauración Ambiental, Mónica Muñoz-Miranda y Silvia G. Sánchez-Franco, quiénes complementaron la caracterización fisicoquímica de los suelos mediante la determinación de color, textura, materia orgánica, humedad, pH, densidad, entre otros.
Los resultados obtenidos han sido recientemente publicados en la revista científica Industrial Crops & Products la cual se encuentra indexada en el Journal Citation Reports con un factor de impacto de 6.449. Al final de la nota se anexa la liga de acceso al documento.
