La miel de abeja (principalmente de la especie Apis mellifera), es un alimento milenario que se produce a partir de la recolección del néctar que las abejas encuentran en las flores en diferentes lugares y en distintas temporadas.
El proceso de elaboración inicia cuando el insecto ha ingerido el néctar y le añade enzimas y proteínas, propiciando la descomposición de los azúcares en fructosa y glucosa principalmente.
Una vez que la abeja regresa a la colmena, se lleva a cabo un proceso mecánico que involucra a varias abejas, el cual permite eliminar parte de la humedad de esta mezcla. Concluido lo anterior, la miel se almacena en los panales, cuyas pequeñas celdas son selladas con cera hasta el momento en que es requerida por las abejas o retirada por los apicultores.
Durante su proceso de elaboración, la miel adquiere una composición de fructosa, glucosa, agua, otros azúcares, aminoácidos y en menor medida minerales y otros elementos, como las partículas de polen. El polen depende del tipo de flor visitada por las abejas durante la recolección, siendo este un elemento de gran interés, ya que a través de su estudio se puede identificar el tipo de miel, así como su origen geográfico.
La Melisopalinología es el estudio de los granos de polen en la miel, una técnica que sirve entre otras cosas, para saber si una miel está adulterada o si fue mezclada con alguna otra variedad de miel. En el caso de la miel de un solo tipo de flor (mono floral) es de suma importancia esta verificación porque permite certificar la pureza de su origen.
Con el fin de comercializar la miel en distintos mercados, existen prácticas cuyo fin es ocultar o adulterar el origen floral y regional de esta.
Actualmente, por medio de la melisopalinología solo es posible detectar si la miel fue sometida a un filtrado para eliminar los granos de polen al no observarlos en el microscopio. Pero no puede determinar si los granos fueron introducidos posteriormente de otra variedad floral para hacerla pasar como otro tipo de miel.
Este tipo de limitaciones hacen necesario emplear nuevos métodos de detección más sofisticados y confiables, uno de ellos es la Tomografía de Coherencia Óptica (OCT).
Esta técnica recién se está introduciendo al estudio de la miel en el Centro de Investigaciones en Óptica, A.C. (CIO) – Unidad Aguascalientes, para observar los grupos de cristales. Estos cristales son particulares para cada tipo de miel y solo se pueden destruir dañando el producto con calor. Es por ello, que en este estudio se están utilizando para identificar si la miel es monofloral o multifloral. Se están realizando análisis de la velocidad de cristalización en la miel, independientemente de que exista o no polen en ella.
Al ser México uno de los principales exportadores de miel, su identificación adquiere gran relevancia, ya que la calidad de las diferentes variedades que se producen en nuestro país podrían ser candidatos a una denominación de origen, debido a las condiciones particulares de las flores endémicas de cada región.
Este estudio permitirá establecer una nueva metodología en la certificación de la miel, beneficiando a los apicultores nacionales, ya que les dará la oportunidad de competir en el mercado internacional, llevando productos de calidad certificada a un escenario mundial en el que existen cientos de variedades de miel.
